1 kilo of clean monkfish

Preparation

In a large bowl, mix the finely chopped monkfish without bones, the eggs, the cream, the breadcrumbs, a little parsley, three finely chopped cloves of garlic, salt and pepper.
With very clean and wet hands, we make balls the size of a walnut; flour them and fry them in plenty of olive oil until golden brown; drain them and reserve them on kitchen paper.
Apart, we fry the chopped onion, add the rest of the garlic and let it brown; we incorporate a spoonful of flour and move well; Pour in the white wine and let the alcohol evaporate.
Add the fish broth and let it boil for a few minutes; Add the meatballs and cook for half an hour. Adjust the seasoning and sprinkle with a little parsley.
