Chicken wings with tandoori masala

Indian cuisine is powerful in both flavor and color, thanks mostly to the use (or abuse) of spices. The tandoori masala is a mixture of spices among which you can find coriander, cinnamon, cayenne, cardamom, cumin, pepper, ginger, cloves, garlic, bay leaf, nutmeg or fenugreek. The characteristic reddish color of this chicken is due to the addition of food coloring. It so happens that this mixture of spices is the one that has been traditionally used in the dishes that were cooked in the tandoor, a rotary and cylindrical charcoal-fired clay kiln.
