It is very common to find salted cod, but at certain times of the year we can also find it fresh, and it really gives spectacular results. Its flavor, its texture… they are special! One of the varieties that we can find is called "Skrei" that comes from Norway and is really delicious.

In this case, we are not going to complicate things: we are going to prepare a side of potatoes and peppers in the microwave so as not to stain a pan and save baking time. Let's go there?

Ingredients

4 large cod fillets (150 g each approx)
2 large potatoes
1 / 2 cebolla
2 garlic
1/2 red pepper
1/2 green pepper
4 tablespoons olive oil
50 g of white wine
50 g of water with 1/2 diluted stock cube (you can use fish, vegetable or chicken stock)

Preparation

Cut the potatoes, garlic, peppers and onion into thin slices or strips.
We put everything in a large microwave-safe bowl and add the oil, wine and water. Stir well to mix the dressing and separate the vegetable pieces from each other and cook in the microwave until tender. It will be approximately 15-20 minutes at 800W or 1000W. You must stop the microwave every 5 minutes and stir all the content very well. Be careful not to burn yourself.
When the potatoes are tender (we can check it with a fork) we arrange this garnish on a baking tray.
Place the cod fillets on top, skin side down, and season them.
We introduce with the hot oven at 180º 15 minutes.
