1 Basic pound cake thick
kiwi jelly powder
water
shredded coconut
Cream to ride
icing sugar (4 tablespoons per 250 ml. of cream)
lime zest

Preparation

Once we have the cake ready and cold, we cut it into equal cubes. Those that have bark, we remove it.
Prepare the kiwi jelly with the amount of water indicated on the package. When it is curdling, we will observe it. As soon as we notice it creamy, with a texture that we can spread, we remove it from the fridge.
Spread the cake with the gelatin and sprinkle it with plenty of grated coconut. Let the sponge cubes set in the fridge. If we do not want the side that sits on the tray to be damaged, we can prick the cake with a stick and insert it into a sponge or cork.
Whip the cold cream with the lemon zest and icing sugar.
Cut the cubes in half and fill them with the cream. We serve.
