Ingredients
80 gr butter at room temperature
150 gr brown sugar
2 eggs
150 gr flour
1 teaspoon Royal type baking powder
100 ml semi-skimmed milk
1 1/2 teaspoon ground cinnamon
1 apple, peeled and cut into small pieces
For the cream cheese:
80 gr butter at room temperature
200 gr icing sugar or icing sugar
85 gr creamy Philadelphia cheese
Preparation
We preheat the oven to 170ºC in the up and down option without fan. We fill the cupcake tray with the capsules. In a bowl, beat the butter together with the sugar until they bind. Next, we add the eggs one by one and beat well. In addition, we sift the flour together with the yeast and cinnamon and add half to the dough in the bowl. Add the milk and then the remaining flour and mix well (without over beating, so that the dough is not hard!). Add the apple well cut and stir with the shovel until everything is well linked.
We divide the dough into the capsules and bake for approximately 20-25 minutes.
While the cupcakes are being made in the oven, we make the cream cheese. In a bowl, sift the icing sugar and beat with the butter for 1-2 minutes on low speed and then 4-5 on high speed, until the butter turns whitish *. We add the cream cheese and beat until it is like a cream. If we want to color the cream, it is time to add the coloring. I have used Sugarflair's 'Deep Red'.
We remove the cupcakes from the oven and let them cool on a rack. Once cold, decorate with the cream with a pastry bag. I have used the Wilton 2D nozzle and added a 'tail' and some sheets made with fondant to simulate an apple.
Tip! If we see that the icing sugar with the butter costs to bind, we can add a tablespoon of milk.
