Ingredients

300 gr. pastry flour
5 gr. of salt
10 gr. fresh yeast (diced)
150 ml. warm milk
40 gr. Lamb
60 gr. natural yogurt
35 gr. of butter
melted butter or honey to paint

Preparation

Mix the flour and salt. Dissolve the yeast in the warm milk and add it to the flour. So, we pour the honey and yogurt. When everything is well mixed, add the butter at room temperature. We knead for a few minutes until we get an elastic and homogeneous dough.
We form a ball and let it rest in a bowl covered with a damp cloth for an hour in a warm place (35º) so that it doubles its volume. So, we knead by hand to remove the air and form about 16 individual buns. Let stand again covered for 15 minutes.
Arrange the buns in a mold and let them rise again as before until they double their size, approximately one hour.
We cook the buns in a preheated oven at 180 degrees for 15-18 minutes or until they are golden. Once out of the oven, we paint them with melted butter or a little honey. Unmold carefully and let them cool on a wire rack.
