Chocolate and yogurt brownie

Preparation

1. We melt the chocolate cut into small pieces in the microwave for a couple of minutes at medium power. We can also melt it in a bain-marie.

2. Separate the whites from the yolks. We reserve the whites. Add the yolks to the melted chocolate. Also add half the sugar. The mixture will get quite hard, so we lighten it up with the natural yogurt. We also incorporate the flour and zest into the dough.

3. Now we mount the egg whites until stiff with the remaining sugar, using the electric whisk. Little by little we are integrating the meringue into the chocolate mass, through enveloping movements and using a wooden spoon.

4. Pour the dough into a greased and floured mold or covered with non-stick paper. Bake in a preheated oven at 160 degrees for 40 minutes. The dough should be moist inside and the crust very brittle. Then, we remove from the oven, let rest for a few minutes and unmold.
