Ingredients

  • 750 gr. strawberries
  • 1 beautiful chive
  • 100 gr. sugar
  • 80 ml. raspberry vinegar
  • black pepper
  • a few drops of Tabasco
  • oil
  • shawl

Preparation

  1. Wash the strawberries, dry them, remove the stem and cut them into pieces of the desired size, depending on how thin the chutney is.

  2. Cut the spring onion in juliana and then chop it.

  3. In a saucepan, sauté the chives in a little oil for a few seconds with a little salt until they sweat. Then, we add the sugar, let the spring onion caramelize slightly and add the strawberries.

  4. Also add the vinegar and cook uncovered for 40 minutes until the fruit is very tender and the chutney thickens, stirring frequently. At the end, we rectify salt, pepper and Tabasco.

  5. To enrich the chutney: With apple, pear, other red fruits, spices like cloves or cinnamon, less vinegar and more champagne...
