100 gr. finely chopped pistachios
100 gr. of butter
100 gr. Of flour
8 gr. baking powder
100gr. gr. of sugar
green food coloring (optional)
sugar glass

Preparation

To grind the pistachios, the ideal is to use a kitchen robot or, failing that, a coffee grinder. We can also crush them together with the butter in the traditional blender. It is good that we reserve some without chopping them excessively, so that they are noticeable when biting them.
Sift the flour into a bowl with a sieve, add the pistachios, yeast and sugar. Mix and add the melted butter. Knead until a smooth and homogeneous mixture is obtained.
We form balls with the dough and flatten it a little. We cut in an original way if we wish with the help of a cookie cutter.
Place the cookies on a parchment paper covered baking sheet, leaving a little space between them. We cook them in a preheated oven at 180 degrees for 10 or 15 minutes.
Once the cookies are baked, let them cool on a wire rack.
