If it weren't for adding a part of cream, we would be preparing the classic egg custard. The caramel cream, As its name indicates, It is just as creamy as flan and we can serve it in the same way (cream, fruit ...) Of course, the candy should not be missing.

This Creme caramel recipe is very similar to egg flan but with a different twist. Do not stop trying it because you will like it

Ingredients

  • 175 gr. sugar + 2 tablespoons
  • 4 tablespoons of water
  • 250 ml. whipping cream
  • 250 ml. whole milk
  • 1 vanilla bean
  • 2 large eggs
  • 2 large egg yolks
  • butter

Preparation

  1. To make the caramel, heat 50 gr. sugar with water over medium-high heat, stirring, until dissolved. Cook over low heat until the caramel is golden and thick.

  2. Then, we remove it from the heat and add a few drops of lemon juice to prevent the caramel from crystallizing. Pour the caramel into a flanera and spread it well.

  3. To make the cream, we pour the milk and cream into a saucepan. We heat it over medium heat together with the sugar until it dissolves.

  4. On the other hand, we beat the eggs and the yolks in a bowl and gradually pour the milk on top without stopping stirring. We pour this cream into the caramelized mold.

  5. We put the mold on a deep baking dish filled with boiling water up to about two thirds of its height.

  6. We put the tray with the mold in the preheated oven at 160 degrees for 75-90 minutes or until the creme caramel is curdled, with the appearance of a flan.

  7. Let it cool out of the oven at room temperature.

  8. We refrigerate later with the mold covered in film.
