Ingredients

1 kg. mealy meat potatoes
90 gr. of butter
2 tablespoons grated cheese powder
2 tablespoons of milk
2 yolks
pepper

Preparation

Peel the potatoes, wash them and put them to boil whole in a pot with salted water. When they are tender, drain the potatoes well and grate or press them. We correct the point of salt (seeing if the butter also has it) and pepper.
Gradually add the butter and work the purée for about eight minutes.
Then add the milk and then the cheese and egg yolks. Mix the puree well and spread it on a tray to let it rest for 2 hours.
Place the potato dough on a floured table and flatten the surface a little with the rolling pin.
Cut the pasta into the desired shape, using a cookie cutter, and arrange the portions on a greased baking sheet or lined with parchment paper. We can also save time by cooling the dough, without waiting for it to harden, and pour it into a pastry bag and form a fun figure. Paint the surface of the potato figurines with egg yolk.
Bake in a hot oven at 200 degrees until the figures are golden.
