Before we get into culinary details, let's explain the origin of the name of these cookies. It is the acronym for Australian and New Zealand Army Corps, a joint army made up of Australian and New Zealand troops, established at the beginning of the century on the occasion of World War I. To support the soldiers, the women prepared these cookies whose ingredients (oatmeal, flour, molasses, coconut ...) endured the long journey well. by sea until they reached the troops. In addition, anzac they supposed an excellent nutritional contribution for the physical exhaustion of the military.

Anzac cookies are typical for Christmas although I eat them throughout the year. If you want to try them, these are the steps to follow

Ingredients

  • 1 cup of flour
  • 1 cup of rolled oats
  • 1/2 cup of sugar
  • 3/4 cup of grated coconut
  • 125 grams of butter
  • 2 tablespoons of Golden Syrup (honey or maple syrup is also valid)
  • 1 tablespoon of very hot water (15 ml)
  • 1/2 teaspoon baking soda

Preparation

  1. In a large container, mix the flour with the oat flakes, sugar and coconut.

  2. Separately, melt the butter and mix it with the syrup.

  3. Dilute the baking soda in the water and add the butter, with the pan already off the heat. We form a small hole in the flour mixture and pour the previous preparation. Now we can knead the cookie dough until it is homogeneous.

  4. We form small balls with the dough and place them on a baking tray lined with non-stick paper, trying to separate them from each other.

  5. We crush the cookies with our hands and cook them in a preheated oven at 160 degrees for about 10 minutes or until they have lightly browned.

  6. Out of the oven, let them cool on a wire rack.

  7. We can enrich these cookies with orange peel, fruits and nuts, muesli ...
