Preparation

We put the butter with the egg yolk in the electric mixer at a gentle speed so that it mounts. Gradually add the icing sugar.
Add the flour and mix.
Shape the dough into a cylinder and wrap it in plastic wrap. We shape with our hands and take it to the fridge for an hour. The thickness of the cylinder has to be suitable for the size of the diameter of a biscuit. If necessary, we will form several rolls.
Outside the fridge, remove the paper and cover the dough with the egg white. Pass the cylinder through the granulated sugar. We put the cylinder on a board and cut it into 1 cm slices. approximately.
We put the cookies on a tray previously greased or covered with parchment paper. We cook the cookies in a preheated oven at 170 degrees for 20 minutes or until golden brown.
