Although we have called them Christmas cookies, the truth is that you can prepare them at any time of the year because they are delicious and they are also gluten-free in case you are intolerant.

Ingredients

200 gr. Corn flour.
100 gr. Beiker flour.
125 gr. Butter.
120 gr. Sugar.
1 egg.
1 teaspoon lemon zest or to taste (or vanilla essence)
Pastry pencils to decorate
Fideitos / colored balls

Preparation

Cut the butter into cubes and mix it with the two types of flour with your fingertips like when we make a crumble.
When we have a coarse breadcrumb consistency, add the sugar.
We mix well. Add the lightly beaten egg, and the lemon zest (or vanilla essence).
We love until we make a homogeneous mass.
Cover with transparent kitchen paper and let rest in the fridge for approximately 1 hour.
After that time, we stretch with a rolling pin until we obtain a thickness of half a centimeter, and we shape it with the Christmas cookie cutters.
Bake at 175º for 10 to 15 minutes.
Let cool on a wire rack, decorate with pastry pencils and enjoy.
