Ingredients

  • 1 kilo of picotas or fresh cherries
  • 750 ml of water
  • 1 kg of sugar

Preparation

  1. First we clean the cherries and put them in boiling water for a couple of minutes.

  2. We drain them immediately and carefully remove the bone. We can use a specific stoner or cut them in half.

  3. Let them drain on a cloth.

  4. Mix the water and sugar and put it over low heat until you get a thick syrup, about to thread or thread. More or less we will be left with a liter of syrup.

  5. When the syrup is ready, we add the cherries and let them cook for about 8 minutes.

  6. Then, we remove from the heat, let cool and pass the cherries with the syrup into previously sterilized glass jars.

  7. We leave the jars uncovered until the next day. Let cool and sprinkle with a couple of tablespoons of sugar.

  8. We close the jars and sterilize in a water bath for 15 minutes.

  9. We keep the jars in a clean, dry, cool place, away from sources of light and heat.

  10. Once the jars are cold, they are stored in a cool, dry place.
