The Haluskys are going to love the kids. They are a kind of mini-gnocchi typical of Slovak cuisine that are made with potato. They are served with a creamy white cheese typical of Central Europe called Bryndza and with smoked bacon shavings.

The authentic recipe must be made with this type of cheese, but failing that, we can substitute it with similar ones such as ricotta, cottage cheese or feta.

Ingredients

750 g potatoes
400 g Bryndza (the most typical Slovakian cheese)
100 g of smoked bacon
1 egg
300 g flour
salt.

Preparation

Peel and cut the potatoes.
Now we grate them and it will be almost like raw puree. Add the egg, flour and salt.
Let stand for a few minutes while we bring a pot with 2 liters of water to boil.
To form the halusky we take two small teaspoons and we make small balls. Once we have all of them, we add them to the boiling water and leave them for a couple of minutes until all the pasta floats.
Cut the bacon into thin strips and fry it with a little oil.
Mix the halusky with the fried bacon and cheese and serve hot.
