It is interesting, once we put it in the freezer, give it a blow of the mixer and put it back to break the crystals that form and get a suitable texture, since we do not have a refrigerator.

4 level tablespoons of cornstarch (40g)
1 1/4 cup sugar (200g)
1 teaspoon grated lemon zest
1 1/4 cup of water
2 eggs 1/4 cup lemon juice
1 pinch of salt

Preparation

We dissolve the cornstarch, the sugar and the lemon zest in the water. We put in a saucepan to cook over medium heat, stirring frequently, until it boils and thickens.
Remove from the heat and let it temper; incorporate the 2 lightly beaten egg yolks, mixing quickly. Cook 2 min. more to a bain-marie, without stopping to move. Remove from the heat, add the lemon juice and mix. Let cool and incorporate, mixing gently, the whites until stiff.
We pour the mixture into a large tub and take it to the freezer. When it is a little frozen, take it out and beat it for minutes. Then go back to the freezer. Serve with waffles and garnish with lemon zest.
