Preparation

In a saucepan, boil the wine with the sugar until a thick syrup is obtained. Mix the cocoa powder and the jam with the syrup.
In a separate bowl we begin to mount the whites with the electric rods. When they begin to take consistency, we pour the wine syrup, warm, little by little without stopping beating. The meringue should be shiny, with a purplish color, thick and firm.
Whip the cold cream and carefully incorporate it into the mousse so that the whites do not sink.
Let the mousse poured into glasses or into a piping bag cool for at least two hours before serving.
