Onion and cheese muffins

Fancy salty muffins for an appetizer? Try these cheese and onion. The original uses cheddar, but I have substituted it for manchego. You can change the marjoram for another herb that you want.

You haven't tried cupcakes like these, I assure you. If you want to surprise at home with a starter, these onion and cheese muffins are the right choice

Ingredients

  • 300 g flour
  • 1 tsp. yeast
  • 1/2 tsp salt
  • 2 beautiful onions, chopped
  • 2 beaten eggs
  • 225 ml of milk
  • 1.5 tsp. marjoram
  • 6 tbsp. Of olive oil
  • 100 g grated Manchego cheese
  • Ground black pepper

Preparation

  1. Preheat the oven to 200ºC and prepare a multiple muffin pan or individual paper/silicone capsules.

  2. Heat 2 tablespoons of oil and sauté the onion for 10-12 minutes, until it is transparent and soft.

  3. Sift the flour, yeast, and salt into a bowl.

  4. In another container, mix the eggs, milk, marjoram and the rest of the oil. Add a good pinch of freshly ground black pepper.

  5. Mix the wet ingredients with the dry ones. Add the poached onion and grated cheese (reserve a little).

  6. Fill the muffin cups 3/4 full and sprinkle with a little more grated cheese and pepper.

  7. Bake for 20-25 minutes until they are golden brown and have risen. When you press them, they should be spongy, a sign that they will be ready.

    Hi! I just made this recipe and the first batches I made came out a bit bland, so I added some more salt and tuna, and they were delicious! Also I made them with a cupcake maker and it is very easy and comfortable. Thanks for the recipe ^^
