Homemade cocoa butter

Preparation

1. A while before so that it allows them to cool down, toast the almonds in the oven or in a frying pan without oil, being careful not to burn them, because if we toast them too much they will become bitter. We also toast the flour in the oven at 200ºC for 20 minutes, stirring frequently with the help of a wooden spoon. The flour will turn caramel in color and the smell will be intense; be careful not to make it very toasted so that it does not become bitter either. Let cool completely. We take the lard out of the refrigerator.

2. When we have everything ready, we preheat the oven to 200º. We pulverize the almonds with a kitchen robot and reserve.

3. We do the same with sugar to obtain icing sugar. In a large bowl or salad bowl, mix the toasted flour, the reserved almonds, the chocolate and the cinnamon, removing any possible lumps.

4. Add the butter (to the point of ointment), and mix until it is incorporated into the mixture, which should have the consistency of wet sand.

5. We make a ball with the dough that must be compact. Do not overdo it with the kneading, as it would be very soft. If this is the case, we can put it in the fridge for half an hour.

6. We put the dough on top of a baking paper, and we put another one on top (the dough has to be between two baking papers). Flatten it with the roller, leaving it between 1 or 2 cm thick.

7. With a round or flower-shaped cookie cutter like the one in the photo, we form the polvorones and transfer them to the oven tray lined with parchment or parchment paper. It is better to do it with a spatula so that they do not lose their shape. All the excess cuts are joined again in a ball, flattened and we continue to form shortbreads, until the dough is finished.

8. Bake for 15-16 minutes at 200º. Once golden, we take them out avoiding touching them, because they will still be soft and they can be deformed; Let them cool completely on the tray.

9. Sprinkle with icing sugar, cocoa or cinnamon and, if you want, wrap one by one in tissue paper.
