They do not bite and are decorated with cheese and black olives. Delicious!

16 corn pancakes
125 gr of minced meat
Homemade tomato sauce
1 / 2 cebolla
1 Carrot
1 green pepper
1 red pepper
250 gr of cheddar cheese
Sliced black olives
Chopped lettuce
Chopped tomato

Preparation

Preheat the oven to 180 degrees, and use a muffin pan to make the mini pizzas. Drizzle a little olive oil on each hole of the mold, and place the pancake in each hole. If you see that it is too big for the hole, with the help of a glass or a cookie cutter, make the shape of the mini pizza.
Meanwhile, we prepare the filling. To do this, we chop the onion, the peppers and the carrot very finely and in a pan, put a tablespoon of olive oil and sauté the vegetables. When they are done, add the minced meat and let it cook.
When the meat is starting to cook, we add the homemade tomato sauce, we can either make it ourselves or buy it already made. And we let everything mix and cook for about 10 more minutes.
Fill each one of the pancakes with the mixture and put on top of each one a little cheddar cheese and some black olives to decorate.
Bake the mini pizzas for about 12-15 minutes at 180 degrees until we see the cheese melt and gratin. Once done, she lets them cool down a bit and carefully remove them from the mold.
Serve with some homemade guacamole and chopped lettuce with diced tomato, and enjoy!
