Panacotta of plums with vanilla, the fruit in two textures

In this panacotta we use the yellow plums and the Red, and we serve them in two textures, some beaten in the panacotta, and others in a more acidic sauce that will contrast with the sweetness of the dessert. The finish, a vanilla syrup.
