24 phyllo dough squares
12 squares of Manchego cheese
12 brie squares
12 squares of quince meat
1 small jar of Jerte cherry jam
olive oil for frying.

Preparation

For the quince cheese packets, we put each manchego cheese cube on top of a quince cheese cube and wrap it in a square of filo pastry
Close the packets and fry them briefly in a pan with plenty of hot oil
Drain on absorbent paper.
For the brie packets, we put the brie pieces on the other 12 squares of filo pastry, and on them a spoonful of cherry jam
Close the packets, fry them in very hot oil
Drain on absorbent paper.
We serve both types of packets, well mixed, well separately.
