4 boneless skinless chicken breasts diced
400 gr. fresh pork sausages or minced meat
200 gr. sliced ham
3 tablespoons chopped fresh herbs
the grated rind of 1 lemon
assorted powdered spices: cumin, cloves, cinnamon, nutmeg, pepper
shawl
butter or lard for greasing
beaten eggs to glaze
half a liter of chicken or stew broth
11 gr. powdered gelatin

Preparation

We must prepare a dough similar to that of meatballs by mixing all the ingredients with our hands until they are well integrated. It is the most comfortable way to prepare the filling. We can also intersperse layers with the spiced chicken, the herbs, the minced meat and the ham, so that we have a more beautiful cut.
To form the cake, grease the mold with butter and line it with a sheet of shortcrust pastry, the edges of which must protrude so that the cake can be properly closed later. We must press the dough with our fingers to adhere it well to the walls and bottom of the mold.
Fill the mold with the filling mixture, pressing from time to time with your hands to distribute it well throughout the cavity.
Roll out the other, smaller disk of dough, and place it on top of the filling, covering the cake well. To do this, we seal the edges of both sheets of pasta, pressing with our fingers. We make a hole in the upper center of the cake and paint with beaten egg.
Place a sheet of non-stick paper over the top of the cake and bake for 2 hours.
Out of the oven, let the cake sit for 30-45 minutes to set. Meanwhile we preheat the oven to 190 degrees.
Meanwhile, we prepare the gelatin by mixing the powders with a little hot water. When it is dissolved, we dilute it in the also hot broth.
After the resting time of the cake, we remove it from the mold, put it on the baking tray and brush it completely with more beaten egg.
We put the cake back in the oven for half an hour. If we see that the top is browning too much, we cover it with aluminum foil. When the entire cake is a uniform, bright golden color, remove from the oven and allow to cool.
Through the hole that we made in the cake and with the help of a funnel, we pour the gelatin little by little and carefully, as the cake admits it.
Put the cake in the fridge for at least 4 hours for the gelatin to set.
