900 gr. salmon fillets, skinless and boneless
2 large eggs + 2 yolks
200 ml. fresh cream
25 gr. of butter
150 gr. of onion
250 gr. asparagus
pepper

Preparation

Mix the eggs and yolks with the cream and season with salt and pepper.
Melt the butter in a wide frying pan and sauté the onion in julienne until it is well poached.
Blanch the asparagus in a pot with boiling salted water. We can also cook them in the microwave with 2 tablespoons of water at high power for 3 minutes. Once cooked, we submerge them in ice water to stop the cooking and maintain the green color of the asparagus.
We cover a detachable cake mold with non-stick paper or with butter and a little flour. Line the walls and bottom with one of the shortcrust pastry plates, letting the edges protrude from the mold.
Chop the salmon, add a little oil and season it. Arrange half of the fish on the base of the cake, cover with onion and asparagus. Pour half of the egg mixture and gently shake the mold so that these ingredients are well impregnated.
We repeat this operation and close the cake with the other sheet of shortcrust pastry, sealing the edges well. We make two holes in the surface of the cake and paint it with more beaten egg or melted butter.
We put the cake in the preheated oven at 200 degrees for about 40 minutes or until the dough is golden and crisp.
