Chicken breasts stuffed with tomato sauce and… Baked!

Preparation

1. Clean the chicken breasts and trim the fat. Carefully cut them in half, add salt and pepper and set aside.

2. We begin to prepare our tomato sauce. Clean the tomatoes and cut them into cubes. Cut the onion into julienne strips, the garlic into very small pieces, clean the zucchini, peel it, and make small cubes.

3. In a pan add a little olive oil, and let it heat up. Add the onion and minced garlic and fry everything. Once they are poached, add the zucchini bits and tomato and let everything cook for at least 20 minutes over low heat. After that time, add the white wine, the basil leaves and let the sauce reduce for another 7 minutes. After that time, turn off the heat and add the grated cheese. Stir a few times with the spoon until the cheese melts into the sauce.

4. Preheat the oven to 180 degrees, and take each of the open breasts and fill them with the homemade tomato sauce that we have prepared. So that none of the filling escapes, you have two options. Either hold each one of the breasts with some chopsticks, or tie them with the help of a good string.

5. Put them on a previously greased baking tray and let them cook at 180 degrees for about 20 minutes. Once they are ready, make longitudinal slices and serve them with a good salad.
