1 pizza base
6 prawns
6 monkfish cubes
1 splash of cognac
1 garlic clove
homemade tomato sauce with onion
string mozzarella
fresh parsley
oil

Preparation

In a frying pan with a bottom of oil, brown the prawns and the monkfish separately with a little salt and finely chopped garlic. The fish should brown slightly. Add a few drops of cognac to give it flavor and raise the heat to evaporate it. We reserve both ingredients.
We spread a very thin layer of tomato sauce (cast) on the pizza base and spread a good amount of mozzarella on it. Bake it for about 12 minutes at 200 degrees until the base is golden and the mozzarella is melted.
When serving the pizza, we distribute the fish on top, sprinkle with fresh parsley and water with the juice that the grouper and prawns left in the pan (we can deglaze with more brandy to obtain more sauce).
