Today we are going to prepare a chicken recipe with an unusual ingredient but that gives it a really special touch of flavor.

1,5kg. chopped chicken
2 red onions
8 cloves of garlic
300 ml. quality red vermouth (variable amount to taste)
shawl
black pepper
oil

Preparation

Once we have the clean and dry chicken, we salt and pepper it and put it to brown with the whole garlic on all sides in a large saucepan with the bottom well covered with oil. Once the chicken is ready, we remove it together with the garlic to a source.
In the same saucepan, lightly fry the onions cut into a very fine julienne. When they are tender, honeyed, reduced and transparent, add the chicken, garlic and vermouth.
Let simmer until the chicken is tender.
If we see that the chicken needs liquid, we can add a little broth, water or more vermouth. It is a matter of the power of flavor that we want.
When the chicken is finished cooking, we remove the pieces if we want to strain the sauce or pass it through the Chinese to incorporate the onion and garlic. Another option is to serve the chicken as is.
