Chicken with sweet wine, a homemade stew

Using a quality muscat or Pedro Ximénez we ensure that the flavor of this casserole chicken is unbeatable. To obtain a true grandmother's chicken, we will add a crushed fried bread and hard-boiled egg to the sauce, ingredients that will also add consistency to the stew.

Ingredients

  • 1 chicken, chopped
  • 1 beautiful onion
  • 6 cloves of garlic
  • saffron in threads
  • 300 ml. sweet wine
  • 1 boiled egg
  • some stale bread
  • flour
  • pepper
  • shawl
  • extra virgin olive oil

Preparation

  1. Season the chicken pieces very well and brown them in a beautiful saucepan well covered with oil. When the meat takes a uniform color, we remove it.

  2. We give the whole garlic cloves a couple of turns in that oil so that they take on a golden color. We withdraw.

  3. Cut the onion into julienne strips and fry it in the same oil as the chicken and garlic. When ready, add the chicken and garlic. We turn the chicken around and pour the wine. Let cook over low heat.

  4. Meanwhile, we cook the egg and fry the bread in oil.

  5. In a mortar we crush the bread with the saffron, the hard-boiled egg yolk and a pinch of salt. We reserve this dough.

  6. When we notice that the chicken is tender and the wine sauce has reduced (if the sauce is very thick when the chicken is still not tender enough, we can add a little chicken broth instead of more wine so that the bird continues cooking slowly), we add the compound of bread and egg and mix it in the stew. Cook for a few minutes and serve.
