Although it is a slightly more elaborate dish, this Stewed Chicken with Nuts is so tender and so rich that it is worth trying it at any time of the year.

Ingredients

  • 4 chicken breasts
  • 1 cebolla
  • 2 handfuls of fruits and assorted dried fruits
  • 1 stick of cinnamon
  • 1 splash of cognac or brandy
  • fragrant or sweet wine
  • chicken soup
  • pepper
  • shawl
  • extra virgin olive oil

Preparation

  1. Once we have the breasts clean and dry, we season them. In a wide saucepan or deep frying pan, brown them on both sides with a good amount of oil over medium heat.

  2. Meanwhile, we cut the onion in juliana. Once the chicken is browned, we remove it from the casserole and add the onion to poach it well.

  3. We put the dried fruits, the cinnamon stick and the cognac in the saucepan. Let reduce over high heat for a couple of minutes. We will not add the nuts yet (almonds, walnuts, hazelnuts...) so that they do not soften.

  4. We put the chicken breasts in the saucepan, water them with a sufficient amount of broth and wine so that they finish cooking and we obtain a thick sauce. It will be enough that half of the breasts are covered. We can turn it around so that they cook on both sides.

  5. One minute before removing the pot from the heat, add the nuts and add salt and pepper again if necessary.
