16 corn or wheat tortillas
500 gr. fresh salmon fillets
2 avocados
1 chive
1 green pepper
200 gr. melting cheese into threads
oil
lemon juice
pepper

Preparation

Cut the salmon into fine cubes, season them with salt and pepper and brown them in a frying pan with a little oil. We withdraw.
In the same pan, briefly sauté the chopped onion and pepper. It is better that they remain crisp, not too poached.
Cut the avocado flesh and roughly mash it with a fork. Add the vegetables and mix. Drizzle with a little lemon juice.
We put an omelette in a pan, cover with the vegetables, a little salmon and cheese. Cover with another tortilla and cook for a couple of minutes on each side so that the quesadilla browns and the cheese melts.
