Ingredients

  • 1 package of Chinese noodles
  • 1 garlic
  • 1 teaspoon fresh ginger
  • 1 teaspoon of olive oil
  • 2 cups chicken broth
  • 1 cup Dashi Kombu broth
  • 1 tablespoon sake (rice liqueur)
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 3 tablespoons soy sauce
  • 1 sheet of Nori seaweed
  • pepper
  • finely chopped chives
  • bits of chicken or other meat

Preparation

  1. Heat the olive oil in a deep saucepan. Sauté the cut ginger and garlic for a few seconds.

  2. Add the chicken soup and kombu dashi broth to the saucepan and bring to a boil. Add the sugar, salt, sake and soy sauce into the soup.

  3. We can boil the noodles directly in the soup or separately in boiling water for a few minutes, adding them drained to the soup if we choose this second option.

  4. We put as companions in the soup with noodles, a square of nori seaweed, the finely chopped spring onion, the meat in strings and a little pepper.
