Serving a stuffed meat roll at Christmas is a deeply ingrained custom in our homes. Why? One, we can leave prepared in advance. Two, it is a meat provided with bones that should only be cut into slices, No need to carve or generate waste on the table. Three, with a good filling and a few simple sauce to choose from, they tend to be liked by most diners.

Ingredients

  • 1 large turkey breast (600 gr. approx.)
  • 200 grams of minced turkey meat
  • 50 gr. of toasted hazelnuts
  • 2 boiled eggs
  • 1 garlic clove
  • aromatic herbs to taste (thyme, rosemary…)
  • 250 ml. brandy
  • oil
  • salt and pepper

Preparation

  1. In a frying pan with a little olive oil, sauté the minced garlic for a few seconds

  2. Then we add the minced meat and sauté for a few minutes so that it browns slightly.

  3. Season with salt and pepper and add the chopped hazelnuts and herbs

  4. We cook about 10 minutes so that the meat is done well.

  5. Meanwhile, salt and pepper the turkey breast open in half in the shape of a book and brush it with oil

  6. Spread it out on a tray and add the filling and the chopped hard-boiled eggs at one end, always leaving the edges free.

  7. We roll up very well so that the roll is very tight and we tie it with a net or with thread.

  8. Now we brown the turkey roll in a saucepan with oil so that it browns lightly on all sides

  9. Next, we transfer it to a baking dish, bathe it with the juices from having browned it and with the cognac

  10. We put in the oven at 170 degrees for about 40 minutes, wetting from time to time with its own juices

  11. Once the time has passed, we let it rest for about 15 minutes before untying it.
