This recipe for muffin It was passed to me by an English friend, Julie, who had it written down in a little notebook with vocabulary. Apparently the lady of his house gave it to him when he was staying learning our language in Seville. And bless that lady and her recipe, simple and delicious!  We continue to fight against industrial bakery. Thanks Julie!

These muffins keep very well for several days in an airtight container.

Nothing like good muffins for breakfast and with this recipe you can enjoy them in a matter of minutes

Spanish Muffins

Ingredients

  • 350g flour
  • 250 g of sugar
  • 250 g of sunflower or seed oil
  • 100 g cooking cream
  • 1 teaspoon yeast
  • the zest of 1 lemon or orange
  • 250 g of eggs (about 4 or 5)
  • 1 pinch of salt

Preparation

  1. Preheat the oven to 230 ° C.

  2. In a large bowl and with a food processor, mix the eggs and sugar until pale. Add the lemon or orange zest, the cream and the oil. Mix well.

  3. Then add the sifted flour with the yeast and salt.

  4. Mix until smooth. Pour batter into multi-cup muffin tins or paper liners (fill 3/4 full).

  5. Lower the temperature and bake at 190°C-200°C. Cook for 15 minutes making sure they don't brown too much.

  6. Let cool on a rack.

  7. Insert a toothpick into them to check that they are ready (when it comes out clean they will be ready).

Notes

You can dust each cupcake with a little granulated sugar before baking. That characteristic little crust will be created.
