It is not puff pastry with minced meat and vegetables but it is made in the same way. Only that we will make this cake with filo dough, a very thin dough that is baked in several layers and is very crunchy, hence its similarity to the strudel. We can leave the filling ready hours before the meal and form and bake the strudel just before eating, without having to worry about chopping vegetables or sautéing them with meat.

500 gr. of assorted vegetables
500 gr. chicken minced meat
¾ cup of grated Parmesan cheese
½ cup of mozzarella in threads
chopped fresh herbs
6 phyllo dough sheets
pepper
olive oil

Preparation

We take two large frying pans and cover their bottoms with oil.
In one of them we brown the meat with salt and pepper and in the other, the vegetables cut into very fine julienne strips and also with a little salt. We can put onions, leeks, aubergines, courgettes, peppers, bean sprouts...
Add to the sautéed vegetables, once tender, most of the grated cheese and all the mozzarella, as well as the herbs and reserve off the heat.
On a countertop, we place a sheet of baking paper. Spread a sheet of filo pastry on top and spray or lightly brush it with oil.
Cover with another phyllo sheet and grease again. We repeat this operation until the six sheets overlap.
We spread the meat and vegetables on one of the edges of the dough sheet and roll up all the sheets to close the filling.
Transfer the roll to a baking tray covered with non-stick paper and grease the strudel.
Sprinkle with the remaining grated cheese and put it in the oven at 200 degrees for 25 or 30 minutes or until the pasta is crispy and golden.
Let it rest for 5 minutes before cutting and serving.
