Stuffed Peppadew Peppers: Creamy Feta and Garlic Stuffed Peppers

Una South African recipe, which originally uses a type of canned peppers called "Peppadew Peppers". These peppers can sometimes be found in English food stores, but by adapting the recipe, we can make them with our piquillo peppers they have nothing to envy the South Africans.

Go ahead and try this South African recipe for peppers stuffed with cream feta cheese and garlic. They are delicious and very easy to make.

Ingredients

  • 2 cans of piquillo peppers
  • 150 g of feta cheese
  • ¼ fresh cheese
  • 2 cloves of garlic
  • 2 teaspoons of sugar
  • 1 tablespoon chopped chives (plus a little more for garnish)

  • extra virgin olive oil.

Preparation

  1. Put a drizzle of oil in a frying pan, put the peppers sprinkled with a little sugar for 3 minutes on one side and 3 on the other

  2. We have to do this operation very carefully so as not to break them.

  3. Reserve.

  4. On the other hand, we put the cheeses in the blender glass, the garlic coarsely chopped and crushed until obtaining a homogeneous cream

  5. We lower with a spatula what may have remained on the sides of the glass, add a pinch of salt (the feta is already salty) and ground pepper to taste

  6. We shred again.

  7. Transfer the cream to a bowl, add the tablespoon of chopped chives, and stir

  8. Fill the peppers with the cream, preferably putting it in a piping bag with a flat nozzle

  9. Otherwise, we do it with a teaspoon and temper so as not to break them.

  10. Put the peppers in a bowl, water them with a little olive oil, and sprinkle them with chopped chives

  11. To enjoy.
