Preparation

In a saucepan we pour part of the cream and put it on the fire to heat.
When the cream is hot (not boiling), we add the chopped chocolate and part of the sugar to it. We remove until we integrate everything. Let it cold down.
On the other hand, we mount the egg whites until stiff with a little sugar.
Half whip the rest of the cream (which must be very cold but not frozen), mix it with the egg whites and the melted chocolate with the help of a spatula, with enveloping movements.
Pour the foam into individual glasses.
We refrigerate a couple of hours and serve accompanied by a little whipped cream and some chocolate shavings (which you can do by passing a chocolate tablet with a peeler).
