3 egg whites
150 gr. sugar
1 tsp salt
Vanilla essence
Liquid food coloring
Chocolate chips (optional)

Preparation

Preheat the oven at a low temperature, from 100 to 120ºC. Line a plate with parchment paper.
We beat the whites at medium speed with a pinch of salt, until they mount a little.
Add the sugar little by little and continue to assemble. Add the essence of vanilla (and the coloring if we are going to use it). Beat until the meringue is very firm (on the verge of heavy snow).
We introduce the meringue in the pastry bag and with a nozzle that we choose (curly for example) we are making mononcitos with the bag of the desired size on the plate, separated from each other a little (you can decorate with some chocolate chips).
Bake between 1 hour, 1 and 20 minutes depending on the size of the meringues. After the time has elapsed, turn off the oven and leave the meringues in the oven until they are very dry.
