Look what pie so showy and so appetizing. It is a juicy sponge cake decorated with a simple mascarpone cream that we have already elaborated in other recetinace. I propose two finishes, one with filling and one without.

This lattice cake recipe could not be more appetizing. Do you dare to try it?

Ingredients

  • 4 eggs (yolks and whites separated)
  • 150 grams of sugars
  • 100 grams of flour
  • 100 grams of cornstarch
  • Zest of a lemon and its juice
  • Half yeast envelope
  • 4 tablespoons sunflower oil

For the Mascarpone Cream:

  • 250 grams of mascarpone cheese
  • 150 grams of icing sugar
  • 150 grams of cream

For coverage:

  • 200 grams of white chocolate
  • 60 grams of butter
  • Peeled walnuts for garnish

Preparation

  1. In a large bowl, beat the egg yolks with 100 grams of sugar until they are fluffy and the result is a homogeneous cream.

  2. Add the pinch of salt, the 4 tablespoons of sunflower oil, the lemon zest and its juice.

  3. Sift the two types of flour mixed with the yeast over the previous mixture.

  4. We mount the egg whites until stiff with the remaining 50 grams of sugar. We mix with the above with enveloping movements and the help of a spatula.

  5. Bake at 180ºC for about 30-40 minutes, until inserting the famous toothpick in the center comes out clean. Let the cake cool down.

  6. We mount the cream that has to be very cold (not frozen); beat the cheese (at room temperature) and mix it with the cream; Add the icing sugar little by little.

  7. Now two options: we can cut the cake in half and fill with the mascarpone cream. In addition to this (although we will do more then) we put the mascarpone cream in a pastry bag and keep it in the fridge to take shape. With a fine nozzle we make the drawing that we want (we can always imitate the one in the photo that we propose). The ideal is to do the sides first, let it harden and do the top last.

  8. You can also add some peeled walnuts as decoration.
