1 egg yolk
1 whole egg

450 ml cream
600 g milk chocolate (more than 35% cocoa)

150 ml whole milk

Preparation

For brisa (or quebrada) dough, mix the flour and sugar, then mix the flour, sugar, salt, and butter with your fingers until the mixture looks like coarse breadcrumbs. Next, add the egg yolk and whole egg and mix slowly, mixing until the dough forms a ball. Wrap the dough in transparent paper and refrigerate for at least half an hour.
Preheat the oven to 160 ° C.
Roll out the dough on a lightly floured surface to 2mm thick. Spread a 28-inch diameter removable round pan with butter and lightly dust with flour. Line with the dough, raising the edges; let it rest in the fridge for 20 minutes.
Cover the dough with parchment or parchment paper and fill with chickpeas or weights to prevent the dough from losing its shape when baking; cook for about 20 minutes. Remove the parchment paper and weights and return to the oven for 5 to 8 minutes or until the dough is golden brown.
Lower the oven to 140 ° C.
