Yogurt and jam ice cream cake (with biscuit base)

It's swelteringly hot for May and we're going to swap the baked pastries (at least for today) for a iced cake of yogurt with a cookie base. You can put any jam on top, although I have chosen strawberries, but with an apricot it is scary too.

This frozen yogurt and jam cake recipe is the perfect dessert once the heat has arrived and we feel like eating fresh

Ingredients

  • 1 roll of Maria cookies (about 12)
  • 50 grams of butter
  • 125 g sugar
  • 100 gr of condensed milk
  • 400 gr of natural yogurt (4 natural yogurts approx.)
  • 100 g of strawberry jam
  • 400 gr of whipping cream
  • Strawberries to decorate

Preparation

  1. Grind the biscuits very fine and mix them with the butter, which must be soft. Flatten well with the back of a spoon in a removable ring mold. Put in the fridge to harden.

  2. Mix the yogurt in a bowl with the sugar and condensed milk. Add the whipped cream and continue mixing.

  3. Remove the mold from the fridge and pour the mixture on the base. We put the jam on top and mix it a little with a fork with the yogurt mixture. We put in the freezer at least 6 hours, but better to do it the day before.

  4. Once you take it out of the freezer, unmold and decorate with some strawberries making a flower.

    The frozen desserts are one of my favorites especially because
    We don't have to bake and they are very easy to make.
