Ingredients

  • 175 g of creamy butter and a little more for the mold
  • 165 g of sugar
  • 2 tablespoons grated lemon peel
  • 3 eggs
  • 150 g flour
  • 1 teaspoon baking powder
  • 70 g sour cream (or unsweetened Greek yogurt failing that)
  • 3 peaches, sliced
  • icing sugar for dusting (option 1)
  • Apricot jam (option 2)
  • whipped cream to accompany (if we like)

Preparation

  1. Preheat the oven to 180ºC degrees. Butter a mold with a diameter of 25 cm

  2. Wash the peaches, pitted, and cut them into chunks.

  3. With the help of the blender, mix the butter, sugar and lemon zest until creamy- 6-8 minutes.

  4. Add the eggs one at a time, giving a beat of the mixer each time. Add the sifted flour twice, with the yeast and sour cream; mix gently.

  5. Pour the dough into the mold, and decorate on top with the peach slices on top. Bake 50-60 minutes, until a toothpick inserted into the control comes out clean. Let the cake cool for 10 minutes in the mold, unmold and cool completely on a rack.

  6. Sprinkle with icing sugar (option 1) or paint the surface with previously heated apricot jam to give it shine (option 2) and serve with whipped cream if desired.
