A new cheesecake recipe comes from the kitchens of Recetín. The creator of this delicious cake is the young Sevillian pastry chef Juan García. Juan says that his cheesecake only has two secrets. One is the addition of a yolk plus and the other, the manual and slow beating of the ingredients without having to resort to the electric mixer.

150 gr. crushed cookies
75 gr. melted butter
900 gr. creamy white cheese
300 gr. sugar (white or brown)
5 gr. of salt
5 M eggs + 1 yolk
200 gr. liquid whipping cream
6 gr. vanilla essence

natural forest fruits

Preparation

Mix the biscuits and butter and place this sandy mass at the base of the mold, pressing with your fingers so that it is well compact. We reserve in the fridge.
We preheat the oven to 200 degrees. Meanwhile, we mix the cheese with the sugar in a bowl until we get a cream without lumps.
Next, we are incorporating the rest of the ingredients (salt, eggs, yolk, cream and vanilla) until we homogenize the entire mixture well.
Pour the resulting mixture on the biscuit base in the mold and bake at a lower temperature than the one we had activated, about 170-175 degrees for about 40-45 minutes or until the surface of the cake has a nice golden color . Then, we let the cake cool in the mold at room temperature.
We cover the surface of the cake with jam of some (s) fruits of the forest and decorate with natural fruits (blueberries, raspberries, blackberries or currants).
