Sacher cake for Valentine's Day

Preparation

1. We start with the cake batter. We separate the yolks from the whites. We mount the egg whites in a bowl until stiff with a pinch of salt, helping us with the electric beaters.

2. We mount the yolks separately with the sugar until they are white.

3. We melt about 150 gr. of the chopped dark chocolate. When melted, add the butter in small pieces.

4. Quickly, we add the yolks to the chocolate. Then add the flour and stir everything very well to mix to eliminate lumps from the dough. We also combine the egg whites, with enveloping movements from the bottom up.

5. Pour the dough into one or two heart-shaped molds and cook the cake in a preheated oven at 180 degrees for about 40 minutes. Let it cool on a rack.

6. If we prepare a single cake, we cut it in two and spread one of the faces of each heart with jam.

7. Melt the remaining chocolate in the hot cream and let this cream cool in the fridge for 15 minutes. Then, we beat it very well with the electric rods to leave it foamy.

8. Join the two pieces of the cake and cover it with the ganache. We decorate with hearts.
