Strawberry cream tartlets or do we change the fruit?

As we are in full strawberry season we are going to prepare some delicious tartlets of pastry cream and strawberries. You can put any other fruit, or even mix them (with apple, kiwi and banana they are really good). We use wafers one of those for making dumplings, but a sheet of puff pastry is worth the same.

Ingredients

  • 1 packet of dumpling wafers
  • 250 ml. whole milk
  • Yolks 2
  • 50 gr. sugar
  • 1 tablespoon vanilla sugar
  • 20 gr. cornstarch
  • A few drops of orange blossom essence
  • 2 tablespoons of water, with two tablespoons of icing sugar and a few drops of lemon
  • Strawberries to decorate
  • Vegetal paper

Preparation

  1. Preheat the oven to 190º-200ºC.

  2. First, we stretch the wafers out of the dough a bit on a lightly floured surface.

  3. We place each one on a multiple muffin mold or a flanera.

  4. Prick the dough and put parchment paper cut to the same size and chickpeas* on top (or another mold of the same size) so that they weigh down and the dough does not rise. Bake for 18-20 minutes. Let cool on a wire rack before unmolding.

  5. We put the milk on the fire at a low temperature with the drops of orange blossom essence.

  6. We pour the beaten yolks, the cornstarch and the sugar, stirring continuously with the whisk.

  7. When it acquires consistency, we set aside and let it cool.

  8. Fill the cold tartlets with the pastry cream.

  9. Cut the strawberries, place them on top. We make a glaze by heating two tablespoons of water with a few drops of lemon and another two of icing sugar.

  10. We constantly remove until it takes syrup consistency.

  11. Paint the strawberries with this glaze and the help of a kitchen brush.

  12. We let it cool in the fridge, we take it out for 15 minutes before being consumed to temper it.

Notes

*Do not throw these chickpeas: keep them in a jar with a sign that says "pastry" or something like that, and use them as weight in other preparations that need the same process.
