Returning to remember that it is autumn and that this season brings us some wonderful fruits, we have remembered again the persimmon, which we already talked about in one of the posts of Autumn fruits, in all their splendor. With some sweet persimmons we are going to make an original and light tiramisù that young and old will not forget.

We are going to prepare a slightly more sophisticated dessert but with a result that everyone at home will like. This recipe for tiramisù with persimmon and mascarpone jelly is delicious

8 persimmons
8 gelatin sheets
100mm sweet wine
Cinnamon
Vanilla in pod, in essence or ground
300 grams of mascarpone cheese
Sugar
Decaffeinated coffee powder
Thin sponge base

Preparation

First we prepare the gelatin. Remember to prepare it a few hours before to have it curdled
Soak the gelatin sheets while we peel the persimmons
Next we make a persimmon cream
Chop them up and add two tablespoons of sugar, cinnamon and a bit of vanilla, blend with a blender.
To make the gelatin, heat the wine in a saucepan and before it starts to boil, remove it and add the drained gelatin until dissolved
Add it to the persimmon cream
Mix well and pour the preparation into a rectangular mold until it is about two fingers full, so that the gelatin is not too thick.
Let cool and then reserve in the fridge until it gels.
Season the mascarpone cheese with the rest of the vanilla and sweeten with the remaining sugar
We mix or mount a little with the rods
If we want to soften it we can add whipped cream or meringue.
To assemble the tiramisù, cut a portion of persimmon gelatin and place it on the base
On top we place a thin layer of sponge cake that we will have drunk in water with a little sugar and decaffeinated
On the cake, add a layer of mascarpone
Finally, cover with another layer of gelatin and decorate with some mascarpone ribbons
Finish by watering with decaf or cocoa powder diluted in water.
