The torrijas, like the pestinos, are a traditional sweet typical of the Easter season. Already in Lent, the kitchens of the grandmothers and the pastry shops begin to smell of lemon and cinnamon, fried bread and honey. That is that the French toast has already begun to be prepared.
As you already know, torrijas are a sweet made from fried bread dipped in milk or wine, then dipped in honey, sugar and cinnamon. They are tender and delicious, and if you get too cloying you can choose to reduce the amounts of honey and sugar.
The traditional French toast they are made with bread from the day before, the one that is already getting hard. However, on these dates they go on the market special sliced breads for torrijas. If you can't find it, the special sandwich bread or the rustic type go very well too.
By the way, like the pestiños, torrijas have also been used to make other desserts.
