Salty torrijas with Manchego cheese (or with the one you like the most)

Torrijas are a creative way to take advantage of stale bread that we have left over. However, we always think of them as a dessert and not as a salty tapa. In this elaboration, We use one of the many techniques to make torrijas, but we soak them in Manchego cheese, although you can do it with any other cheese you like. Serve them, if you like, on a bed of salad or with some cherry tomatoes garnished.
