Ingredients

1 kg. bread dough *
250 gr. Of olive oil
250 gr. sugar
100 gr. fried and ground almonds
1 tablespoon cinnamon
the zest of 1 lemon
a handful of sesame
a handful of anise seeds or Matalahúva

For the bread dough:

750 gr. strength flour
470 ml of water
20 gr. pressed or fresh yeast
15 gr. of salt

Preparation

A minimum of two hours before starting to make the cake, we make the bread dough. First, fry the sesame seeds, aniseed, lemon zest and almonds in the oil. Let cool completely.
Mix the ingredients for the bread dough until you get an elastic dough. Let the dough rest in a container covered with a cloth in a warm place (35º) for a couple of hours or until it doubles in volume.
Add the reserved oil to the bread dough. When everything is well integrated, we spread the dough and form the cake. Sprinkle on top with a mixture of sugar, cinnamon and sesame seeds.
We bake at 200 degrees on parchment paper for about 20-30 minutes until the cake is golden brown.
