These four so energetic and nutritious ingredients are the ones that make up the crunchy and delicious imperial cakes. Similar to hard nougat from alicante, the imperial cakes are those artisan snacks that at Christmas click in the mouth and cause us a sweet pleasure.

There are still many days of Christmas holidays and the kitchen cannot be closed and the sweets stop coming out to continue filling the trays with the assortment of Christmas sweets.

Ingredients

  • 500 grams of peeled and toasted almonds
  • 250 grams of honey
  • 175 g of sugar
  • 1 egg white
  • waffle wafers

Preparation

  1. In a saucepan we put the sugar with the honey over a very low heat

  2. Meanwhile, we mount the white to the point of heavy snow.

  3. Once the sugar has melted, add the egg whites and stir and mix non-stop over very low heat with a wooden spoon for 45 minutes until the dough is white, thick and shiny.

  4. To test if the pasta is ready, we put a little on a plate and if we see that it does not stick, it is ready.

  5. Add the almonds and mix them very well with the pasta.

  6. We form the cake by putting a large wafer on the counter and spread the almond mass over it.

  7. We place the other wafer on top and, being careful not to burn ourselves, with the help of a rolling pin, flatten it until it is one centimeter thick, so that it is easier to split and eat.

  8. We wait for it to cool and harden.

    Can you change the honey for another ingredient?

      In this case I find it difficult... I would try some syrup like maple. A hug!
